Ingredients:

2 lamb chops, about 200g each

1 tbsp olive oil

Salt and freshly ground black pepper

100g cherry tomatoes, halved

2 handfuls of watercress

Juice of 1/2 lemon

1 tbsp balsamic vinegar

Parmesan shavings, to serve

Instructions:

Preheat a griddle or frying pan over a medium-high heat.

Rub the lamb chops with olive oil and season with salt and pepper.

Cook the lamb chops for 2-3 minutes on each side for medium-rare, or until cooked to your liking.

Remove the lamb chops from the pan and allow them to rest for 5 minutes.

In a large bowl, combine the cherry tomatoes, watercress, lemon juice, and balsamic vinegar.

Season with salt and pepper to taste.

Slice the lamb chops thinly and arrange them on a plate.

Spoon the tomato and watercress mixture over the lamb.
